Is your beef grass-fed?

Our cattle are pasture-raised and grass-fed for most of their lives, grazing freely on 350 acres here in Middle Tennessee. They finish on a custom grain blend formulated by our local co-op and butcher for flavor, tenderness, and marbling — never confined or force-fed, with continuous access to pasture.

Is your beef organic?

We’re not USDA Certified Organic, but our standards go beyond organic in key ways:

• No added hormones or steroids
• No mRNA vaccines; traditional vaccines only when truly necessary (e.g., tetanus/blackleg)
• Pasture-raised & humanely handled with low-stress practices
• Regenerative agriculture focused on soil health and biodiversity

What’s included in the Full Beef Box?

Each month you receive 22–25 lbs from one of three color-coded boxes. You rotate through them for balanced variety:

• 8 lbs Ground Beef  •  8 Burger Patties (⅓ lb each)
• 4 NY Strip Steaks  •  1 Chuck Roast (~3 lbs)

🟥 Red Box

• 4 Ribeye Steaks  •  1 Shoulder or Rump Roast (~3 lbs)

🟩 Green Box

• 8 lbs Ground Beef  •  8 Burger Patties (⅓ lb each)
• 4 Filet Mignon Steaks  •  1 Sirloin Tip Roast (~3 lbs)
• 3 lbs Brisket  •  3 lbs Cube Steak

What’s included in the Half Beef Box?

Each month you receive 10–13 lbs including:

• 4 lbs Ground Beef
• 4 Burger Patties (⅓ lb each)
• 2 Premium Steaks (Filet, Ribeye, or NY Strip)
• 2 Picanha Steaks

Plus 2 rotating cuts drawn across the year from: Flat Iron, Roasts, Sirloin, Skirt, Flank, Ribeye Ribs, Brisket, Cube, Short Ribs, Fajita.

Do I have to subscribe for the whole year?

Yes — it’s a 12-month membership (January–December). We plan our herd and inventory around members so everyone gets consistent quality all year.

What if we can’t make a pickup one month?

We can’t hold boxes due to limited freezer space. You can send a friend or family member to pick up for you — just give us their name beforehand.

Can I cancel anytime?

After January begins, mid-year cancellations aren’t available because your spot is part of our herd plan. Experiencing a major life change (move, deployment, etc.)? Reach out and we’ll work with you.

What happens if beef prices go up?

Your membership locks in your price for the entire year. If market prices rise, your monthly rate stays the same.

Can I join after January?

We usually fill up, but we often can add members if there’s capacity. The best way to guarantee a spot is to join now.

Can I switch cuts or customize my box?

Boxes are pre-curated to use the whole animal fairly. Over the year you’ll receive a balanced mix of premium steaks, roasts, and specialty cuts. If you have a specific dietary need/allergy, let us know and we’ll try to help.

Can I pay monthly instead of all at once?

Yes — pay monthly via our signup form, or pay in full (Venmo/Cash/Check) and get one month free. Paying in full also locks your price for all 12 months.

How does pickup work each month?

Pickup is the first Saturday of every month, 11 AM–2 PM, at the Hidden Gem Farm barn (863 Old Military Rd, Spring Hill). Bring a cooler/insulated bags. During pickup, members get 10% off everything at our booth (beef, chicken, honey, cheese, elderberry, tallow, salads, and more).

How much freezer space do I need?

A good rule of thumb is ~1 cubic foot per 25–30 lbs of beef. A standard kitchen freezer fits a monthly box for most families.

Can I split a box with someone else?

Yes. Many neighbors/families split. We just keep one point of contact and one payment on file; you handle the split however you like.

Can I buy just one box to try it?

When inventory allows we sell single boxes at the farmers market, but they go quickly. The only way to guarantee a box every month is to join the membership.

What if we love it and want to renew?

We open renewals every November. Members get first priority and we often sell out before public announcements.
